Born in the tiny town of San Cristobal de las Casas, Chiapas, Chef Eduardo began developing his culinary skills in the kitchen of the family owned cantina alongside his mom and her sisters. It was during this period he learned about one of the most important ingredients in classical Mexican cooking...love. Each day they prepared a variety of forty or so different foods which were actually free to the clientele as long as they ordered plenty of beer to wash it down.
After several years of helping out with the family business, it was time for Chef Eduardo to spread his culinary wings and travel to the great Mexico City and to the big times. Determined to learn as much as he could about the restaurant business, he had the opportunity to work in some of the best establishments alongside world renown chefs learning what to do to be successful. He also worked in some of the not so good places learning what not to do. Equally important.
Although he became skilled in cutting edge innovations of modern Mexican cooking, his heart constantly pulled him back to his mom’s kitchen and to the importance of carrying on classic recipes and family traditions. In 1970 he traveled to the new Mexican vacation destination called Cancun. In 1970, no one had ever heard of Cancun. Here he opened his first place and began serving the foods from his childhood.
This is our story...
Soon after, we met and it was love at first sight, and even more as the years past. Just over a decade later, Cancun began to change, and not for the good, so we decided to head to my home here in the USA where I was born. In a small town in upstate New York (the real upstate… near the Canadian border), we opened the Blue Cactus. Even though, as they say, running a restaurant is some of the hardest work you will ever do, we had a blast! The food was awesome, our customers were huge fans, and life was good. Unfortunately, our landlord didn't want to renew our lease, so seven years later, we had to close our doors. But as they say, when one door closes, another opens.
So here we are, retired in beautiful Saint Augustine and keeping busy with this new adventure which is taking this town by storm. Stay tuned. We are only just beginning!
