"Arguably the best ceviche ever!" At least that's what our foody fans who can't get enough say. We only use fresh, not frozen wild caught fish available locally. Sometimes cobia, or swordfish or mahi-mahi, depends on what's out there. We use California EVOO to gently infuse a special selection of fresh herbs, including Mexican tarragon. "Cooked" in fresh squeezed lime juice and a secret "umami" makes bite after bite unforgettable. Best with a cold beer, saltines or tostadas, guacamole or avocado slices. Buen provecho!
